Nestled in El Arenal, Jalisco, lies our cherished home, La Hacienda de la Providencia. Dating back to the 1600s and a UNESCO Heritage site, it’s the cradle of tequila production. Abandoned in the 1960s, we’re restoring its glory, set to reopen in 2024. Our devotion to tequila’s authentic essence is rooted here.
Our quality extends to our 200-acre agave fields, just 3 miles from the distillery. Situated in the UNESCO-registered “Agave Landscape and Ancient Industrial Facilities of Tequila” at 1,450 meters (4,757 feet), the climate and volcanic soils enhance ripening. Maestro Agavero Antonio Sanchez, now in the 3rd generation, meticulously oversees every detail, ensuring the purity and authenticity of our tequila.
Our commitment to excellence is evident at every step of our meticulous process.
When it comes to harvesting, we go above and beyond industry norms, hand-selecting only the finest, ripe agave, ensuring they are at least 6 to 8 years old, leaving behind any less desirable plants in the field.
Our dedication to quality extends to our rare “double jima” technique, where just before cooking, the jimadores shave the pina a second time to expose the white flesh. This step is crucial in achieving the refinement, richness, and smoothness that define Loco Tequila. Additionally, we remove the cogollo (heart), eliminating its waxy and bitter elements from the fermentation process.
We craft our tequila in limited quantities, using ancestral production methods that showcase the original identity of tequila. Our balanced, agave-driven flavor profile is achieved through two maceration techniques: a tahona (stone) wheel and a small roller mill. We even use 100-year-old native yeasts rescued from the tanks of our historic hacienda for our six separate open-air fermentations in every small batch production.
The result is an exceptional and rare tequila that reflects our unwavering commitment to quality and innovation.
